With 30+ years in hospitality, foodservice, manufacturing, and distribution, I’ve led culinary programs for airlines, stadiums, Olympic venues, and major food brands. From serving 95,000 meals weekly at Ansett to leading product innovation for M&J Chickens, I merge creative vision with commercial strategy.
As Head of Culinary at Pappa Flock and Director at Nyaco Foods, I focus on flavour-driven, inclusive menus and scalable solutions. I also founded EJC Foods & Consulting, specializing in product development, facility design, HACCP, and international export across Australia, the UAE, China, and Singapore.
A multi-award-winning chef, I bring passion, operational excellence, and a proven track record of building standout brands and teams. Celebrity chef Eddie now joins our expansion as ambassador and partner.
